Roasted Cauliflower

  • Olive oil cooking spray
  • 1 large head cauliflower
  • 5 tbsp unsalted butter
  • 3/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2/3 cup shredded parmesan cheese


  1. Spray 2 ½-sheet baking pans lightly with olive oil cooking spray.
  2. Stir the melted butter, garlic powder; salt and pepper in a large mixing bowl then add the cauliflower florets. Toss until each floret is completely coated with butter, then toss with parmesan.
  3. Transfer florets to the prepared baking sheets and space them evenly but as far apart as possible so they don’t steam each other.
  4. Spray the cauliflower lightly with cooking spray then bake 18-22 minutes, turning once halfway through.
  5. Remove these yummy bites from the oven when they’re fork tender and golden brown. Enjoy!
