Roasted Lemon Chicken

  • 1 5 lb organic chicken cut into parts
  • 6 – 8 fresh lemons
  • 2 tablespoons of honey
  • 1 teaspoon of pressed garlic
  • Salt and pepper to taste
  • ½ cup pitted kalamata olives
  • ¼ cup chopped flat leaf parsley


  1. Juice the lemons and set aside the half rinds for later.
  2. Whisk together the juice, honey, garlic, salt and pepper.
  3. Place the chicken skin side up in a large baking pan and pour the lemon marinade over the chicken.
  4. Marinate the chicken in the refrigerator for four hours.
  5. Preheat oven to 400 degrees.
  6. Take the lemon rinds and drape over the chicken.
  7. Bake the chicken uncovered for ½ hour.
  8. Add the kalamata olives to the chicken and bake for another ½ hour for 1-hour total cooking time.
  9. Broil the chicken briefly to brown the skin.
  10. Garnish the chicken with chopped flat leaf parsley.
