Roasted Pork with Brussels Sprouts

Serves 4 – 6


  1. 1 pound brussels sprouts, trimmed and cut in half
  2. 3 tablespoons olive oil, separated
  3. Salt
  4. 1 shallot, finely chopped
  5. 2 tablespoon apricot jam
  6. 1 tablespoon Dijon mustard
  7. 1 pork tenderloin, about 1 ½ pounds


  1. Preheat oven to 450 degrees F.
  2. Toss brussels sprouts with two tablespoons olive oil and salt, season as generously as you wish. Scatter on the sheet tray.
  3. Combine remaining 1 tablespoon olive oil, 1 teaspoon of salt, shallot, jam and mustard. Stir until combine and spread on top of pork tenderloin. Place the pork tenderloin on top of the brussels sprouts and roast for 25 minutes, tossing sprouts about 15 minutes in.
  4. Roast until pork’s internal temperature is 145 degrees F.
