“Salted Caramel” Haloumi Cheese and Apple

Serves 2

This is a great afternoon snack, or you can serve it with lightly toasted walnuts as a dessert. Haloumi cheese can now be found in some supermarkets and cheese shops. It’s worth seeking out!


  • ¼ x ¼-in.-thick slices haloumi
  • 1 green apple, cored and cut into ¼-in. wedges pinch of salt
  • sprinkle of ground cinnamon (optional)


  1. Place the haloumi and apple slices in a hot nonstick frying pan.
  2. Jiggle the pan a little so the fat from the haloumi coats the apple.
  3. Cook on both sides for 1–2 minutes, until both the apple and haloumi are a lovely caramel color.
  4. Sprinkle with salt and cinnamon (if using) and serve.
