Seared Ahi Tuna Over Zucchini Pad Thai

  • 1 6oz Ahi Tuna steak
  • 1 large zucchini
  • 2 garlic cloves (minced)
  • 1 red pepper sliced thin
  • 1/2 cup bean sprouts
  • 1 onion sliced
  • 1/4 cup parsley (minced)
  • 1/4 cup lemon juice
  • 1/3 cup honey
  • 1 lime
  • Sea Salt
  • Pepper
  • Red Pepper flakes
  • 3 Tbs peanut oil
  • 1/2 cup olive oil
  • 2 Tbs sesame oil


  1. Saute minced garlic and onions until caramelized then add in the parsley, red peppers and bean sprouts and let cook down.
  2. Peel the zucchini with julienne peeler. Combine the zucchini noodles, salt, pepper, lemon juice, honey, peanut oil and red pepper flakes into the pan w/ other ingredients and saute for 2-3 min.
  3. Coat Ahi Tuna Steak with sesame oil, salt and pepper. Place Ahi Tuna in a pan with olive oil over medium heat. Cook for two minutes on each side.
  4. Cut the Ahi Tuna and plate with Zucchini Pad Thai
