Sheet Tray Cookie Bar

Makes 1 ½ sheet tray


  • ½ cup unsalted butter, melted
  • ¾ cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¾ cup all purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ old fashion rolled oats
  • 1 14 oz. can sweetened condensed milk
  • ½ cup peanut butter
  • 1 cup dark chocolate chips


  1. Preheat oven to 350 degrees F. Spray sheet tray and line in parchment paper.
  2. Whisk together butter, sugar, egg and vanilla. Add flour, baking soda, salt and oats, stir until just combined. Pour ¾ of batter into the sheet tray, reserve remaining for the topping.
  3. In a small bowl combine sweetened condensed milk and peanut butter. Pour over cookie batter evenly. Add remaining cookie batter in tablespoon size drops. This will form a crumbling topping.
  4. Bake for 20 – 25 minutes or until slightly browned and golden. The middle should be dry but not completely set. Pull from the oven and allow to set for 15 minutes, the cookie will continue to cook but it should be very gooey.
  5. Serve with ice cream or whipped cream.
