Simple Olive and Lemon Bowtie Pasta

Serves 4 

8oz Bowtie Pasta (Farfalle)


  • 1 Tablespoon extra virgin olive oil
  • 2 Cloves of garlic
  • 1 (15 oz) can of pitted black olives, rinse and drain to cut the sodium!
  • 1 medium zucchini, finely peeled with a vegetable peeler
  • 2 tablespoons goat cheese, crumbled or feta cheese, crumbled
  • 1 tablespoon lemon zest
  • ¼ teaspoon sea salt


  1. Cook pasta as directed on the package, until al-dente, strain with cool water to stop the cooking process.
  2. In a large sautee pan, over medium heat add the olive oil and the minced garlic. Sautee until fragrant, approx. 2 minutes.
  3. Add in your zucchini strands, peeled thinly with a vegetable peeler and your drained canned olives. Sautee over a medium heat for approx 5 minutes
  4. Add your bow tie pasta to the pan and toss in with the vegetables to coat. Add in sea salt to taste if desired.
  5. Finish off with your goat or feta cheese crumbled and your lemon zest. Add fresh or dried basil or oregano to top if desired. Buon Appetito!
