Simple & Tasty Turkey Tetrazzini

Serves 6-8

  • 1 pound white mushrooms; sliced
  • 1/2 cup diced onion
  • 1 clove garlic; minced
  • 1 cup white wine
  • 1 cup low sodium chicken or veggie broth
  • 1 cup reduced fat cream cheese; softened
  • 1/4 cup diced roasted peppers
  • 1/4 cup chopped fresh parsley
  • 1 cup sweet peas
  • 3 cups cooked, shredded turkey (or chicken)
  • 1 cup reduced fat shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 5 cups cooked spaghetti
  • additional broth or milk
  • 1/2 cup bread crumbs
  1. Preheat oven to 325°.
  2. Heat oil in large skillet over medium heat. Add onion and mushrooms and saute for a few minutes.
  3. Add garlic and cook for another minute.
  4. Pour wine into pan and cook for 5 minutes or until liquid reduces by about half.
  5. Add broth, stir and cook a few more minutes.
  6. Remove from heat and stir in cream cheese.
  7. Add peppers, peas, turkey, cheeses and parsley. Stir to combine. Season to taste with salt and pepper.
  8. Add cooked spaghetti and stir gently to combine.
  9. If mixture is too thick add extra broth and/or milk. It should be loose.
  10. Pour mixture into large baking dish, sprinkle with bread crumbs and bake for 20 minutes.
