Spiced Chocolate Truffles

  • 16 oz. bittersweet chocolate
  • 1 cup heavy cream
  • 1/2 cup coconut flakes
  • 1 tsp. cinnamon
  • 1/2 cup cocoa powder
  • 1/2 cup powdered sugar



  1. In a sauté pan place 1 cup of heavy cream and 1 tsp. cinnamon and bring to a simmer.
  2. Place 8 oz. of chopped bittersweet chocolate in a bowl and pour hot heavy cream mixture on top.
  3. Wait for five minutes and then whisk the bowl containing the chocolate and heavy cream. Mix until it is a consistent mixture- you just made ganache!
  4. Place into refrigerator for 10 minutes until the mixture thickens.
  5. Using your hands, roll the cooled ganache into small balls and place back into refrigerator until ready for use.

Temper Chocolate

  1. Temper chocolate by placing 6 oz. of chocolate over a double broiler.
  2. Continue mixing with a Rubber Spatula until the temperature is at 115°F
  3. Add the remaining 2 oz. then cool to 84°F
  4. Then place on double boiler for 10 seconds. Make sure the temperature of the chocolate does not exceed 91°F.

Making the Truffle

  1. Using a fork dip the ganache into the tempered chocolate mixture until fully coated.
  2. Place coconut, cocoa powders, or powdered sugar on top and serve.
