Strawberries 'n Cream Cookie Parfaits

  • 1 pound fresh strawberries (you can use frozen too)
  • 3 tablespoons water
  • 1-2 tablespoons pure maple syrup, honey or agave
  • 1 cup vanilla or plain Greek yogurt (per parfait)
  • 2 ounces shortbread cookies per serving, crumbled
  • cut strawberries for topping


  1. In a saucepan bring strawberries & water to a boil. Reduce heat, cover & let simmer for about 5 minutes until strawberries are pulpy. Remove the sauce from the heat & let it cool a bit. Puree in the blender. Sweeten to taste if desired. Let the sauce cool in the fridge.
  2. Crush the cookies by hand or in a food processor.
  3. Layer the parfaits with the yogurt, sauce & cookie crumbles.
  4. This recipe makes 1 1/2 cups strawberry sauce. You can use it in so many ways. It's great on pancakes & in smoothies too!
