Sweet Potato Pie Cookies

Ingredients:

• 1 cup of butter (2 sticks) room temp
• 2 eggs (room temp)
• 2 cups of granulated sugar
• 2 cups of brown sugar
• 2 teaspoon of vanilla extract
• 1 teaspoon of nutmeg
• 1 teaspoon of cinnamon
• 8 small sweet potato(mashed)
• 2 cups of flour
• 36 mini muffin paper cups flattened

Directions:

1. Preheat oven to 375
2. Night before or day of, boil sweet potato, Mash in seperate bowl.
3. Add brown sugar and mix by hand.
4. In mixer, add butter and granulated sugar.
5. Mix until fluffy.
6. Add vanilla, then eggs one at a time.
7. Add sweet potato and brow sugar mix, then add flour cinnamon and nutmeg.
8. Mix for about a minute or two.
9. Scoop by the tablesppon size onto a cookie sheet or whoppie pie pan.
10. Bake for 12 to 15 minutes.
11. Cool each cookie on muffin paper cup.
12. Makes about three dozen.
