Sweet Green Meal-in-a-Tumbler

This recipe evolved out of necessity. I wanted a green drink for those days when I knew I wouldn’t be eating as well as I’d like, and that could travel (i.e., wouldn’t spill). The grapefruit and chia make this really thick, while the green powder adds a nutritional kick and “sweetness.”


  • ½ grapefruit
  • ½ lemon
  • ½ green apple
  • 1 cucumber
  • handful of lettuce, arugula or watercress
  • handful of mint or cilantro leaves
  • 1 teaspoon chia seeds
  • 2 teaspoons green powder
  • ½ to 1 cup coconut water
  • handful of ice


  1. If you’re using a high-powered blender, toss all the ingredients in together—seeds and all—and blend for a minute or so.
  2. This will make 2–3 servings. If you’re using a juicer, juice the grapefruit, lemon, apple, cucumber, lettuce and herbs, then stir in the remaining ingredients.
  3. This will make 1–2 servings.
