Sweet Potato Coins with Creamy Maple Dipping Sauce

Serves 4

  • 2 tablespoons orange juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • freshly ground black pepper
  • 3 medium sweet potatoes, scrubbed
  • 1 teaspoon brown sugar
  1. Preheat the oven to 425°.
  2. In large mixing bowl whisk orange juice, olive oil, brown sugar, thyme, salt & pepper.
  3. Cut the potatoes into ½-inch coins add to mixing bowl with orange juice mixture. Toss to coat well.
  4. Arrange in a single layer on baking sheet lined with parchment paper.
  5. Sprinkle with brown sugar and roast until the potatoes are tender, about 25 minutes.
  6. Season with salt and pepper as desired.

  • 1/2 cup plain nonfat Greek yogurt
  • 2 tablespoons pure maple syrup
  • 1/8 teaspoon cinnamon
  • pinch of salt
  • pinch of ground black pepper


  1. Whisk all ingredients together
  2. Serve as a dip for your favorite veggies or snacks
