Sweet and Sour Red Snapper

  • 2 pounds red snapper filets
  • Salt
  • Pepper
  • ½ cup flour
  • 8 tablespoons olive oil
  • 1 large onion, chopped
  • 1 cup chopped celery
  • One 8-ounce can tomato sauce
  • 20 green marinated Sicilian olives, pitted and halved
  • 3 tablespoons capers, rinsed
  • ¼ cup sugar
  • ¼ cup white wine vinegar
  1. Season fish with salt and pepper and dredge in flour, shaking off excess.
  2. Saute fish in 5 tablespoons oil for 3 minutes on each side. Remove fish and set aside; discard liquid in pan.
  3. Heat remaining 3 tablespoons oil and sauté onion and celery for approximately 5 minutes.
  4. Add tomato sauce, olives, and capers.
  5. In a small bowl combine sugar and vinegar and add to skillet (some sugar may remain undissolved).
  6. Bring to a boil, then reduce heat, cover, and simmer 5 minutes.
  7. Return fish to pan, placing on top of sauce, and cook 5 to 10 minutes on low simmer, covered.
  8. Spoon sauce on top to serve.
