Tagalong Inspired Brownies

With a shortbread crust and peanut butter middle with a brownie topping? What more could you want from these tagalong inspired brownies?
  • One Box of your favorite brownie mix
  • 1/2 cup of peanut butter 
  • Shortbread for the “brownie crust” (recipe below)
  1. Start off by preparing the shortbread (recipe below) and pre-baking in oiled cupcake tins. You can also use liners for this.
  2. Remove slightly baked shortbread from the oven and top with 1 tsp of peanut butter, set aside and allow to melt while making the brownie portion of the recipe
  3. Mix the brownie batter according to the box instructions
  4. Using an ice cream scoop, drop brownie batter overtop of the peanut butter on the shortbread. It will be a ball on top- but melt as the brownie cooks
  5. Bake brownies for 30 minutes at 350 degrees, until tops spring back when touched
  6. Remove from oven and allow to cool for five minutes before popping out of cupcake tins  

Shortbread Crust

  • 1 cup of all purpose flour
  • 1/4 cup of sugar 
  • 1/2 cup of butter, softened to room temperature
  1. Preheat the oven to 350 degrees.
  2. In a bowl combine the flour and sugar, cut in the butter until the mixture is crumbly
  3. Spray an unlined cupcake pan with cooking spray and place about 2 tbsp of shortbread into the bottom of each tin.
  4. Press down with fingers, until the shortbread covers the bottom of the circle of each tin
  5. Prick with a fork, to prevent rising, and pre-bake for 5 minutes. Until shortbread is just lightly browned 
  6. Remove from oven
