Thyme Scented Salmon

Thyme scented salmon, roasted corn, zucchini, spinach, and balsamic vinaigrette"
  • 4pc 6oz salmon filet
  • 6 ears of summer corn, of the cob
  • 2 small zucchini
  • 1 bag triple washed spinach
  • Evol to taste
  • Butter to taste
  • 4 sprigs fresh thyme
  • 1 bottle balsamic vinaigrette (store bought or make your own)
  • Salt and pepper to taste
  1. Heat large skillet, on medium high heat, season salmon with salt and pepper.
  2. Drizzle a little extra virgin olive oil and place the salmon in the pan evenly spread and begin searing on one side about 3 minutes.
  3. Flip and place in the oven at 350 degrees for 4-5 minutes or until desired temperature.
  4. Remove salmon from oven.
  5. Place back on stove at medium high heat, place one tablespoon of butter in pan and place one of the four sprigs of thyme over each salmon and based 30 seconds. Set aside.
  6. In large skillet heat on high heat, add a little oil and the corn, season with salt and pepper, cook 4-5 minutes stirring evenly, add the zucchini and cook another 5 minutes or until caramelized.
  7. In large pot of salted water blanch your spinach pour into a colander and squeeze out excess water.
  8. Place your corn mix on a nice platter or plate, top with spinach, and salmon, and then drizzle with balsamic vinaigrette…. Enjoy!
