Tomatillo Gazpacho


This tomatillo based gazpacho is green with a tart flavor. Tip from Chef. Remove the outer husks and rinse well before using.

  • 2 tablespoon extra virgin olive oil
  • 3 cloves garlic chopped
  • 1 each English cucumber halved and seeded
  • 1 avocado halved and pitted
  • 1 lbs tomatillos
  • 1 each red bell pepper seeded and chopped
  • 15 ounces low sodium chicken broth
  • 1/4 teaspoon sugar
  • 1/2cup scallion chopped.
  1. Sauté pan get your 1 tablespoon extra virgin olive oil to medium heat. Then quickly sauté your garlic and red bell pepper. Then add half of the tomatillo.  
  2. Then blend everything together in a blender. 
  3. Note start on low speed. Then work your way to high. 
  4. After blended strain and chill.
