Tuna Tartare

  • 1 lb of ahi tuna (sashimi quality)
  • 1 small shallot
  • ¼ cup of Moroccan cured olives
  • 1 blood orange
  • 1 dark chocolate bar
  • 1 bag of store bought crispy pretzels
  • 1 fennel bulb
  • 1 tbsp of finely chopped parsley
  • Extra virgin olive oil
  • Salt and pepper to taste


  1. Cut the tuna into very small cubes; place them in the fridge to keep it cold until it gets used. 
  2. The following ingredients should all be cut into small pieces that will resemble the tuna: fennel, orange, olives and crispy pretzels.
  3. Parsley and shallots should be minced finely.
  4. In a bowl, place the tuna and add 2 tsp of minced shallot, 1 tbsp of minced parsley, 1 tbsp of olives, 1 tbsp of orange, 1 tbsp of pretzels and dress it all with olive oil.
  5. With a cheese grater, shave some of the dark chocolate into the tuna. Season with salt and pepper to taste.
