Tuna Crudo

  • 1lb Sushi Grade Tuna
  • 4pc Pineapple, cleaned
  • 1tsp Tamari Soy
  • 1tsp Fava Bean Purée (see recipe below)
  • 1tsp Micro Cilantro
  1. In a large pot, bring 1 gallon of water to a boil.
  2. Blanch tuna in the boiling water for about 30 seconds.
  3. Remove and immediately place in an ice bath until fully cooled.
  4. Slice the tuna to your preferred thickness and place in the refrigerator.
  5. Slice pineapple to same thickness as the tuna and place in the refrigerator.
  6. On a serving platter, arrange tuna and pineapple.
  7. Season to taste with salt and fresh ground pepper.
  8. Place several dollops of fava bean purée around the platter.
  9. Garnish with micro cilantro around plate and drizzle with tamari soy.
  10. Serve immediately.Ingredient Note:
  11. Before cooking, discard any clams that remain open when tapped. After cooking, discard any clams that remain closed


Fava Bean Purée


  • 1 pint Fava Beans, cleaned
  • ½ cup extra virgin olive oil
  • To taste salt and pepper


  1. Place the first two ingredients in blender on high speed and blend until smooth consistency.
  2. Season to taste with salt and fresh ground pepper. 
  3. Store in airtight container in the refrigerator.


Serves 2 as an entrée, 4 as an appetizer
