Vinegar Slaw & Habanero Peach salsa


For Slaw

  • ¼ C red wine vinegar
  • 2 T sugar
  • 2 tsp kosher salt
  • ¼ tsp celery seeds
  • 3 ea scallions
  • ¼ pc red cabbage
  • ½ each carrot
  • ½ each fennel bulb
  • ½ each red onion

For the Salsa

  • 2 each peaches
  • ¼ c red pepper
  • ¼ c red onion
  • ¼ c cilantro
  • 2 T parsley
  • 2 T mint
  • 1 each chili habenero
  • 1 each lime juiced
  • 1 T extra virgin olive oil
  • salt and pepper to taste


For The Slaw

  1. Slice all vegetables paper thin and place in a bowl. In separate bowl add vinegar, sugar, salt, celery seeds.
  2. Once all ingredients are mixed pour over slaw taste and set aside till ready to use.

For the Salsa

  1. Cut the peaches in half and remove the pit, small dice and set in a bowl, split the habernero (besure to wear gloves) remove the seeds and cut into match sticks and mince. Add in to the bowl.
  2. Small dice all the rest of the ingredients and tare the herbs.
  3. Mix everything together and taste for seasoning. Set aside so all the flavors can come together.
