Yellow Cake Layers

  • 1 1/2 cups granulated sugar
  • 1/2 cup shortening
  • 2 eggs
  • 2 cups sifted unbleached all purpose flour (sift then measure)
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons baking powder
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract


  1. Preheat oven to 350 degrees. Grease and flour 2 8-inch cake pans.
  2. In bowl of electric mixer, cream together the sugar and shortening until fluffy. Add eggs. Mix thoroughly.
  3. Sift together the already sifted and then measured flour with salt and baking powder. Add to mixing bowl along with milk and vanilla. Mix well. Scrape down sides and around bottom of bowl. Mix well again.
  4. Pour into prepared pans. Bake 25-30 minutes until golden and cake is pulling away from sides of the pans.
  5. Cool 10 minutes and remove from pan. You can put a filling between the layers or icing between the layers and on the outside of the cake.
