Zucchini Oat Bread


  • Nonstick cooking spray
  • 1-1/2 cups sugar
  • 2-1/4 tsp all purpose flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • ¾ tsp salt
  • ½ tsp baking soda
  • 3 eggs
  • 1 cup apple sauce
  • ¼ cup butter, melted
  • 1 tsp vanilla
  • 2 cups shredded, unpeeled zucchini **For a shortcut, grate the zucchini in your food processor with the grater attachment.
  • 1 cup chopped walnuts or pecans
  • ¾ cup raisins


  1. Preheat the oven to 350 degrees and lightly coat a loaf pan with cooking spray. Set aside.
  2. Next, combine 1 tablespoon of sugar with ¼ teaspoon of cinnamon and set this aside. In another bowl, combine the flour, oats, baking powder, salt, baking soda and remaining cinnamon.
  3. In a separate large mixing bowl, beat the eggs with an electric mixer on medium speed for 2 minutes or until foamy. Add the remaining sugar, the applesauce, butter and vanilla.
  4. Gradually add in the flour mixture and beat on low speed just until combined. Finally, stir in the zucchini, nuts, and raisins. (**If you have a nut allergy, you can definitely make this recipe without nuts). Sprinkle with sugar-cinnamon mixture.
  5. Bake for 1 hour and 20 minutes or until a wooden pick inserted near the center comes out clean. Once entirely baked, allow the bread to cool in pan on a wire rack for 10 minutes. Then remove the bread from the pan and let it to cool entirely on the rack. Wrap and store several hours before slicing and serving.
